Welcome to

finca Pancito, located in the authentic village of Gor at the foot of the Sierra de Baza. The workshops take place in an outside environment with a stunning view on the mountains. The beautiful outside kitchen is fully equipped with a fire oven, smoke house, stone oven,... Pancito offers the full experience of learning about, but also enjoying quality food in a natural cozy setting.

Pancito was founded in 2022 as a micro sourdough bakery in Belgium. The inspirer of the bakery is Pieter Claeys, a self made sourdough baker, who found the love of baking in the Colombian jungle. 
His partner, Ine Keppens is indispensable at Pancito. She is taking care of the wonderful fermentation processes that perfectly fit the sourdough pizzas and breads.

 

In 2024, their journey continued towards Spain, into the mountains of Andalusia. They like to receive passionate souls at their charming farm, where everything is produced at small scale with the highest quality.

 

By giving day workshops, Ine and Pieter want to allow people to taste the quality of homemade food. They teach about their own produced products such as bread, wine, cheese, kombucha and many other fermentation creations.

During this workshop you'll dive in the complete process of making an authentic, light sourdough bread. The loaves will be baked in a traditional wood-fired oven


Ever had a real butter sandwich? By the end of this workshop, you'll have the skills to bake them for yourself at home. Spelt flour is used instead of regular wheat flour, which adds a unique flavor.


While the dough rests, you'll have the opportunity to explore the vineyard and enjoy a little wine tasting.

 

For dinner or lunch, we enjoy or fresh made sandwiches with home made toppings.

 

  • Duration: from 10am-2pm or 2pm-6pm
  • Price: Starting from €190 for 2 persons. €35 per person extra, with a maximum of 10 people.

In this workshop, you have the delightful option to create either pizza napoletana or pizza al taglio, Both of which will be baked in a traditional wood-fired oven. You'll also get a chance to learn about authentic pizza toppings through fermentation techniques.

 

For dessert, we'll making cinnamon rolls using the classic Pancito recipe.

As the dough rises, you'll have the opportunity to explore the vineyard and enjoy a little wine tasting.

Full day workshops

We start with a delightful homemade fermented beverage accompanied by a tasty appetizer.

 

During this workshop, you have the delightful option to create either pizza napoletana or pizza al taglio, Both of which will be baked in a traditional wood-fired oven

 

You'll also get a chance to learn and make authentic pizza toppings through fermentation techniques:

  • Mozarella
  • pickled onion
  • kimchi

By the end of this workshop, you'll have the skills to bake them for yourself at home.

 

For lunch we enjoy sourdough bread and artisanal toppings.

 

After enjoying our lunch, we take a moment to relax and let it settle.  

Once we’re refreshed, we light the wood-fired oven and start getting ready for dinner. We pre-cook vegetables in the oven while you'll have the opportunity to explore the vineyard and enjoy a little wine tasting.

 

Once the oven reaches the perfect temperature, we pop the pizza in and savor the delightful creations of our day!

  • almond milk  
  • salad with kimchi

  • smoked fish

 

After enjoying our lunch, we take a moment to relax and let it settle.  

Once we’re refreshed, we light the wood-fired oven and start getting ready for dinner. We cook pumpkin, sweet potatoes, and regular potatoes right in the fire, while grilling vegetables alongside fish or chorizo.  

You’ll also have the chance to wander through the vineyard and partake in a little wine tasting.

 

We finish by baking our sourdough loaves in the oven, ready for you to take home.
